PAN FRIED BRIE WITH ROASTED THYME GRAPES
INGREDIENTS
1/4 cup honey
2 teaspoons black pepper plus more for serving
1 (8-10 ounce) brie wheel
1 large egg, beaten
1/2 cup bread crumbs
1/2 cup evoo
1 lb of grapes
sprigs of thyme
evoo
salt
A brie wheel coated in breadcrumbs, pan-fried, and served with a sweet, tangy honey and black pepper glaze, paired with juicy oven-roasted grapes infused with thyme leaves.
Start by preparing the juicy, thyme-roasted grapes. Set your oven to 450ºF, spread 1 lb of grapes on a baking sheet, and give them a light drizzle of olive oil. Sprinkle some salt, thyme leaves, and mix everything together. Bake for 7-9 minutes until the grapes start to burst - let some remain intact for texture.
Next, you will create the pan fried brie. In one bowl, beat 1 large egg, and in another, mix 1/2 cup breadcrumbs. Coat the brie wheel in the egg wash, then roll it in the breadcrumbs mixture. Pop it in the freezer for 15 minutes.
Heat a skillet over medium heat and add 1/4 cup of olive oil. Pan-fry the brie for 5 minutes on each side until it turns golden brown. Place it in a bowl and set aside.
Finally, in the same skillet, mix 1/4 cup honey and 2 tsp black pepper (plus more for serving) to create a sweet, tangy glaze. Drizzle it over the brie wheel, and serve alongside the oven-roasted grapes for a perfect finish.
