Dandelion Latte
16 oz almost boiling, filtered water
2 tbsp dandy blend (or brewed cup of dandelion tea)
2 tbsp non-dairy milk or creamer
1-2 tbsp coconut butter
1/4 tsp cinnamon
1 tsp raw honey or maple syrup
Instructions:
Blend all ingredients until frothy, about 30 seconds.
Garnish with additional cinnamon if desired.
Matcha Pancakes (gluten free)
2 cups almond flour
4-8 tsp matcha powder
2 tbsp organic cane sugar (optional)
1 tsp baking powder
1/2 tsp salt
4 eggs
1/2 cup
light coconut milk
1 tsp vanilla extract
Butter or oil for frying
Syrup or honey
Strawberries for topping
Instructions: Mix dry and wet ingredients separately, then combine. Cook on medium heat for 2-3 minutes per side. Serve with maple syrup, matcha powder, and strawberries.
Whipped Honey, Bruleed Grapefruit & Cardamom Ginger Ricotta
2 large grapefruits, segmented
1/4 cup honey (for whipping)
1 cup ricotta cheese
1 tsp ground cardamom
1 tsp ground ginger
2 tbsp chopped pistachios or almonds (optional)
Fresh mint leaves for garnish
Sourdough (optional)
Segment grapefruits. Whip honey until creamy. Whip ricotta in a food processor with cardamom and ginger until light and fluffy. Divide ricotta into bowls, top with grapefruit and whipped honey. Using a kitchen torch, brûlée the grapefruit segments until caramelized. Garnish with nuts and mint if desired.
*For a vegan alternative, use almond or coconut ricotta and agave syrup instead of honey.
Rose & Almond Granola Parfait
2 ½ cups rolled oats
1 ½ cups sliced almonds
½ tsp sea salt
2/3 cup cacao nibs
¾ cup dried currants
3 tbsp dried rose petals (organic, foraged)
½ cup unsalted butter melted, cooled
½ cup honey
1 tsp rose water
½ tsp vanilla extract or vanilla bean paste
1 egg white
Yogurt of choice
Preheat oven to 350°F. Mix oats, pecans, salt, currants, and rose petals. Melt butter and honey, add rose water and vanilla. Combine with oat mixture, stir in egg white. Spread on trays, bake for 25-35 minutes, pressing down after baking. Let cool before adding cacao nibs and serving over your yogurt of choice.
*To add more depth to the flavor, consider toasting the almonds before adding them to the granola mix.
